Prepare the kimchis ingredients: 1-1.5 cups chopped onion (1.75kg)2-3 cloves garlic (about 5g each)3-4 tsp salt1 tbsp olive oil2 cups water (about 4.5 litres)3 tbsp vegetable oil1.
Heat the olive oil in a pan.
Add the onions and sauté until the onion is soft.2.
Add garlic, sautée for a few seconds.3.
Add salt and stir.4.
Add water and stir until it is combined.5.
Add onions, stir and cook for about a minute, until the onions are soft.6.
Add stock and bring to a boil.7.
Reduce the heat and simmer for 10-15 minutes.8.
Remove the onions from the heat.
The mixture should become thick and creamy.9.
When the kamchi is cool enough to handle, strain the ketchup and use a spoon to scoop the mixture into bowls.10.
